Quick and easy lunch, suitable for a low-carb diet. This cheese and herb frittata won't make you sluggish and will keep you active throughout all day.
Cheese and herb frittata
Makes: 4
- 8 eggs
- 1 cup shredded cheddar
- 1 tablespoon chopped oregano leaves
- 2 tablespoon chopped basil leaves
- 1/8 teaspoon salt
- 1 teaspoon vegetable oil
Whisk eggs with cheese, oregano, basil, oil and salt in a microwave container. Season with fresh pepper.
Microwave partially covered to let steam escape at P4 for 15 minutes or until set.
Cut the frittata into wedges and serve hot or at room temperature.
Cottage cheese frittata
This recipe is good if you want to add more protein to your frittata.
Additional ingredient:
- 1/2 cup of cottage cheese
Whisk in 1/2 cup of cottage cheese to the mixture from the previous recipe. Continue with recipe.
If you prefer more carbs in your frittata use next recipe.
Kale and Quinoa frittata
Additional ingredients:
- 1 cup finely chopped kale
- 1 cup cooked quinoa
Microwave kale on high for 2 minutes.
Spread kale and quinoa on a bottom of greased microwave safe pan.
Pour the egg mixture from the first recipe over the vegetable and quinoa mixture and stir gently to combine. Continue with recipe.
Any leftover cooked vegetable or vegetable mix may be substituted for kale.
